Cook Time with Remmi. Hey 918 moms!! I’ve had a great week. How about you??? It has been really busy for me so I am sorry I am late in updating you with this weeks recipe and Remmi rating. I think you are really going to like this one-the kids can be great help in putting this salad together!
Anyway-wanted to share with you that Whole Foods wants me to do some cooking demonstrations which I said I would do. They also talked to me about some recipes for kids with food allergies. To tell you the truth I know kids in my class that has food allergies-but I really never have thought about it much. I went to their seminar last night which was about food allergies. Actually it was about food allergies and food intolerance. What I learned is that 1 in 3 people change their diet because of this. I didn’t understand everything in the seminar, but I did catch on to the fact that kids and families are really affected by this. So I want you to know I am going to keep this in mind and do some further reading and will probably make this a subject on my website. As for my recipes-I am going to keep this problem for people in mind as well.
This week’s recipe
GAZPACHO SALAD
1 cup of cucumber (with seeds removed)
1 cup of red bell pepper
1 cup of cherry tomatoes (cut in half)
1 cup of grapes (cut in half)
1/2 cup of green onions
1/2 cup of celery
1/4 cup of fresh parsley
1/4 cup of almonds
pepper
4 Cups romaine lettuce-sliced
1 Cup croutons
Directions: Put in a bowl. Mix real well with the dressing. Slice 4 cups of romaine lettuce and place in bottom of bowl. Spoon the vegetable mixture on top. Serve salad with croutons on the side(see recipe below)
GRANDMA’S SALAD DRESSING
1/2 cup of oil
1/4 cup of red wine vinegar
1 teaspoon of garlic powder
1 teaspoon of salt
1 teaspoon of dry parsley
1/2 teaspoon of dry mustard
1/2 teaspoon of sugar (I KNOW!! SUGAR IN HEALTHY MEAL!! UNBELIEVABLE!!!)
1/4 teaspoon of red pepper flakes
Directions: Put in a jar and shake up real well. Next pour it on the bowl with your vegetables and you are not going to use all of the dressing.
CROUTONS
Slice french bread into cubes. Drizzle olive oil on bread. Dice clove of garlic and toss with the bread. Sprinkle some parsley on top. Bake in oven at 325 degrees for 10 minutes. Serve them on the side as you don’t want them soggy!
This salad will serve: 4 Cost $ 1.05 per person
