Cook Time with Remmi. Hi 918 moms-hope you are having a great week. My sisters and I went to the Playing in the 918 event earlier this week and we had a great time. Since it is 4th of July weekend-I am giving you a couple of really simple recipes-so you have more time to have some fun!!! And did you know that the 4th of July holiday is the biggest day for barbecue celebrations?? Yeah-almost 70% of Americans will be attending some type of barbecue event. And-have you ever been confused on when you use a c versus a q in the spelling? “Barbeque” with a “Q” is actually the grill itself. “Barbecue” with a “C” is the sauce or the back yard event. Something you always wanted to know huh!!
Menu: Bull’s Eye burgers with Lemony Cucumber Salad with Peppers
Bull’s Eye Burgers
INGREDIENTS:
1 1b. ground beef
1 Large vidalia onion
11/2 t. garlic powder
Salt and pepper
8 Kale leaves(or you could use romaine)
4 Slices of hearty bread-3/4 inches thick.
DIRECTIONS:
Peel onion and slice into 4 -1/4 inch slices. Prepare 4 hamburger patties. Sprinkle the patties with the garlic, salt and pepper. Place onion slice on each. Form the meat mixture around the onion until the top of the onion is flush with the beef patty. Grill patties with onion side up. Half way through cooking flip the patties to finish cooking. Lightly oil the kale or romaine and grill for 2 minutes. Lightly oil the bread and grill. To finish. Divide the cooked lettuces on the bread. Top with the burger with the onion side on top. Serve with the cucumber salad on top or on the side. Directions follow:
Lemony Cucumber Salad with Bell Peppers
INGREDIENTS:
2 European cucumbers-halved and sliced 1/4 inch thick
2 Peppers-one yellow and one red-sliced into matchsticks
3 T lemon juice
1t Dijon mustard
1/3 Cup olive oil
2 T minced chives
Directions:
Mix all of the ingredients in a bowl
Yeah Yeah Yeah I know-its another salad. Just love them. REMMI RATING-I give this dish a 5!

Ok 918 moms it would be great to meet some of you and your children. I will be at Whole Foods tomorrow night at 6:30 PM. We are puting on a cooking demonstration for children. Also we are going to be doing a drawing for those attending and the winner gets a “Cook Time” shopping bag filled with barbecue dinner fixings from Whole Foods.
