Cook Time with Remmi.  Hi 918moms!  Sorry I missed my blog last week-Cook Time with Remmi events have kept me really busy!  FIRST-CONGRATULATIIONS TO JESSICA STONE FOR WINNING LAST WEEKS DRAWING FOR POSTING ON THE FORUMSHE HAS WON A BEAUTIFUL PIECE OF FRANKOMA POTTERY. I get to go to Kansas City this week to do an interview with Radio Disney-can’t wait!  Also we are filming with the head chef at Trezzo Mare there-my first culinary lesson.  We are also going to film at a dairy farm called Shatto-it is going to be a fun week.  Ok-let’s get cooking!! This weeks recipe is really healthy and it is a great way for your kids to start liking  beans.  Here is one of my favorites!

LINGUINE WITH WHITE BEAN PEPPER SAUCE

INGREDIENTS:

1 Lb linguine

1 Lb dry white beans(cover beans in pan with water that is an inch above the beans.  Bring beans to a boil-then turn the stove off cover the beans and let sit for one hour.)

1 C onion(chopped)

1 1/2 T garlic(chopped)

1 large can of tomatoes(diced)

3 Bell Peppers-1 green-1red-1 orange) (cut in 1″ pieces)

2 Cups chicken broth(or vegetable stock)

1 t dried tarragon(can omit if you don’t like)

1/4 Cup Cream

1 T Red wine vinegar

2 T Fresh parsley

Olive oil

Salt and pepper

Directions: After an hour drain the beans and rinse in a colander and set aside.  Put 3 Tbs in of olive oil in a pan and saute onions/garlic/peppers for 3 minutes.  Add tomatoes/stock/beans/salt and pepper/dried tarragon.  Bring to boil and simmer for 45 minutes.  The beans should be soft.  Add the cream/vinegar and parsley and heat through on low.  Fix linguine according to the directions.  Serve as individual portions in medium size bowls.  This recipe will give you 6 portions. (lunch the next day!)

Ok-it’s restaurant week!!  Went to the new Gengis Kahn restaurant on Cherry Street.  The kids will have fun going there but it is a little confusing-we went when it was busy-so we didn’t have much time to make decisions.  If you have not been there-here is how it works.  They give you a small bowl to select what you want in your dish.  There are 3 stations you have to make a decision.  Meat or fish, vegetables, and sauces.  There is a lot to choose from so it was hard to make a decision.  You then give them your bowl of ingredients and then you make the final decision-noodles or rice and there are a couple of kinds each.  They then fix your dish by stir frying.  The kids portion is $4.99.
