POTATO SOUP WITH SAUSAGE AND KALE
6 CUPS CHICKEN BROTH
3 SAUSAGE LINKS (CASINGS REMOVED/SEPARATE IN SMALL PIECES)
1/2 MEDIUM ONION(CHOPPED)
3 GARLIC CLOVES(SLICED)
4 MEDIUM TO LARGE BAKING POTATOES(PEELED AND CUT IN QUARTERS*)
8-10 MEDIUM MUSHROOMS(QUARTERED)
6 KALE LEAVES(TOUGH STEMS REMOVED AND SLICED-3″ PIECES).
4-6 T HALF AND HALF
SALT AND PEPPER
DIRECTIONS:
PLACE ALL OF THE INGREDIENTS IN THE PAN EXCEPT FOR THE KALE AND THE HALF AND HALF. HEAT UNTIL BOILING AND TURN THE HEAT TO MEDIUM. COOK POTATOES UNTIL SOFT(NOT MUSHY). PUT THE SLICED KALE IN THE POT AND COOK FOR 5 MINUTES. LADLE THE SOUP INTO 4 BOWLS AND ADD 1-2 T OF THE HALF AND HALF ON TOP.
*NOTE; SLICE POTATO IN HALF-LONGWAYS-THEN SLICE EACH HALF-SHORT SIDE) THERE SHOULD BE 4 LARGE PIECES.
